Chinese Cold Chicken Breast

Roughly 400grams of chicken.

Prepare the chicken:

  • First, cut the chicken. Relatively thin strips.
  • Next, take some baking soda, dissolve it in water, and soak the chicken in the baking soda water for 15 minutes.
  • After soaking, drain it and rinse with COLD water. Use a paper towel to absorb any lingering moisture.
  • Next, season the chicken with some salt, white pepper (白胡椒粉), scallion sections (葱段), ginger and soy sauce(生抽). Mix those all together.
  • After mixing lightly by hand, add some potato starch or other starch. Add some oil.

Prepare the sauce:

  • Lots of minced garlic
  • Lots of spicy chinese chilis (any kind, just bring it on)
  • Scallion greens (葱花)
  • Sesame seeds

Now, heat up some oil. When it’s hot, add it to that saucy mix.

  • Add some more soy sauce(生抽).
  • Add a tad bit of oyster sauce (蚝油).
  • Add some sugar.
  • Add some sesame sauce
  • Add a tad bit of chinese vinegar (陈醋)

Now, we need to actually cook the chicken.

Bring a wok of water to boil. When it boils, put it to medium and put the chicken in one piece at a time. Flip the chicken pieces as they boil.

Overall, you just need to let them cook for about 2-3 minutes.

Drain, put on a plate, and drizzle that sauce on top. It should be good to go!
